Brie Apple Upside Down Puff Pastries

Ingredients
- 1 apple, thinly sliced
- 1 package (397 g) puff pastry, thawed
- ½ cup (125 g) Canadian brie cheese, sliced
- 1 tablespoon (15 mL) hot honey (or regular honey)
- 1 egg, beaten (for egg wash)
- 1 tablespoon (15 mL) milk (for egg wash)
Instructions
- Preheat — Oven to 350°F. Line a sheet pan with parchment paper.
- Prep pastry — Place thawed puff pastry on a flat surface. Lightly roll with a rolling pin to smooth creases. Cut each sheet into 4 rectangles, slightly bigger than the apple slices.
- Build upside down — Drizzle hot honey in 4 spots (~1"/2.5 cm each) on the parchment. Arrange apple slices on top of the honey. Top each with a slice of brie.
- Cap with pastry — Lay a puff pastry rectangle over each apple-and-brie stack. Gently press the corners to the parchment with a fork to seal and minimize leaks.
- Egg wash — Beat the egg with milk. Brush the tops of the pastries for a shiny, golden crust.
- Bake — 12–15 minutes, until golden brown and well-puffed.
- Serve — Cool slightly (they're served upside down, so the apple-brie-honey bottom becomes the top once inverted) and serve warm.

- Oven time varies — Keep an eye on the pastries so they don't over-brown or burn.
- Apple choice — Crisp varieties like Fuji, Honeycrisp, Gala, or Granny Smith work best.
