Caramelized Onions Sautéed Green Beans (Green Bean Almondine)

Ingredients
- 1 white or yellow onion
- 2 tablespoons salted butter
- 1 teaspoon salt (divided)
- 2 teaspoons vegetable oil (more as needed)
- 16 oz fresh green beans
- 1–2 garlic cloves, minced
- ⅛ cup sliced almonds
Instructions
- Prep — Thinly slice the onion, mince the garlic, and wash the green beans (trim ends if desired).
- Caramelize onion — Melt the butter in a large skillet over medium heat (don't let it brown). Add the onion slices and cook over medium for several minutes, stirring constantly, until soft and slightly browned at the edges. Add ½ teaspoon of the salt, stir a few seconds, then remove the onions and set aside.
- Sauté green beans — Add the vegetable oil to the skillet. Once hot, add the green beans and sauté over medium-high for a few minutes until cooked through and darker green. For a char, cook over high heat with extra oil. Add more butter or oil as needed, and cover briefly if they need more time.
- Combine — Add the garlic and reserved caramelized onion to the skillet; stir to combine. Add the remaining ½ teaspoon of salt (or more to taste). Mix well.
- Finish — Remove from heat once the green beans are fully cooked. Garnish with almonds. Serve and enjoy.
