Easy Breakfast Tacos (Bacon, Egg & Avocado)


Quick breakfast tacos with soft-scrambled eggs, crispy oven bacon, avocado, cheddar, green onion, and cilantro — ready in 30 minutes.

Ingredients

  • 4 pieces bacon
  • 2 green onions, sliced, green and white parts separated
  • 1 tablespoon extra-virgin olive oil
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • Salt and pepper, to taste
  • ½ avocado, small diced
  • 2 tablespoons chopped cilantro
  • 4 tortillas

Instructions

  1. Bake the bacon — Preheat oven to 400°F (200°C). Place bacon on a baking tray and bake 18–20 minutes, or until crispy. Drain on a paper towel.
  2. Start the eggs — Heat the olive oil in a pan over medium heat. Add the white parts of the green onion and sauté 1 minute.
  3. Scramble — Whisk the eggs in a bowl, pour into the pan, and move with a spatula while cooking, flipping a few times, until soft and pillowy but cooked through.
  4. Assemble — Fill each tortilla with a portion of eggs. Top with green parts of green onion, crumbled bacon, diced avocado, cheddar, and cilantro. Season with salt and pepper.

Notes

  • Non-stick pan — Lisa recommends using a non-stick pan specifically for scrambled eggs.
  • Keep eggs soft — Flip gently and pull from the heat while still glossy; residual heat finishes them.
