Easy Breakfast Tacos (Bacon, Egg & Avocado)

Ingredients
- 4 pieces bacon
- 2 green onions, sliced, green and white parts separated
- 1 tablespoon extra-virgin olive oil
- 4 large eggs
- ½ cup shredded cheddar cheese
- Salt and pepper, to taste
- ½ avocado, small diced
- 2 tablespoons chopped cilantro
- 4 tortillas
Instructions
- Bake the bacon — Preheat oven to 400°F (200°C). Place bacon on a baking tray and bake 18–20 minutes, or until crispy. Drain on a paper towel.
- Start the eggs — Heat the olive oil in a pan over medium heat. Add the white parts of the green onion and sauté 1 minute.
- Scramble — Whisk the eggs in a bowl, pour into the pan, and move with a spatula while cooking, flipping a few times, until soft and pillowy but cooked through.
- Assemble — Fill each tortilla with a portion of eggs. Top with green parts of green onion, crumbled bacon, diced avocado, cheddar, and cilantro. Season with salt and pepper.
Notes
- Non-stick pan — Lisa recommends using a non-stick pan specifically for scrambled eggs.
- Keep eggs soft — Flip gently and pull from the heat while still glossy; residual heat finishes them.
