Easy Drop Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp granulated sugar
  • ¾ tsp salt
  • ½ cup (1 stick) cold unsalted butter, grated or cut into small cubes
  • ¾ cup cold whole milk or buttermilk
  • 1 tbsp melted butter, for brushing (optional)
  • Flaky sea salt, for topping (optional)

Instructions

  1. Preheat oven — Heat oven to 425°F. Line a baking sheet with parchment paper.
  2. Whisk dry ingredients — In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in the butter — Add the cold grated butter to the flour mixture. Use your fingers or a pastry cutter to work it in until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
  4. Add milk — Pour in the cold milk and stir with a fork until just combined. Do not overmix — the dough will be shaggy and sticky.
  5. Drop biscuits — Use a ¼-cup measuring cup or large cookie scoop to drop mounds of dough onto the prepared baking sheet, spaced 2 inches apart.
  6. Bake — Bake 11–13 minutes until tops are lightly golden. Brush with melted butter immediately after removing from the oven, and sprinkle with flaky salt if desired.

Notes

  • Keep it cold — Keep all ingredients cold for the flakiest biscuits; chill the mixing bowl if your kitchen is warm.
  • Buttermilk — Adds a slight tang and makes biscuits extra tender.
  • Easy butter trick — Grating frozen butter on a box grater is the easiest way to incorporate it without overworking the dough.
