Veggie Lo Mein (Under 30 Minutes)


Quick weeknight veggie lo mein — carrots, broccoli, bell pepper, and onion tossed with lo mein noodles in a simple soy-sesame-brown sugar sauce. Ready in under 30 minutes.

Ingredients

Sauce

  • ¼ cup vegetable broth
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil

Lo Mein

  • 8 oz lo mein noodles, cooked according to package instructions
  • 1 large carrot, julienned
  • 1 cup broccoli, chopped
  • 1 large red bell pepper, sliced
  • 1 medium onion, sliced
  • 4 garlic cloves
  • 1 tablespoon oil for frying

Instructions

  1. Make the sauce — Whisk vegetable broth, soy sauce, brown sugar, and sesame oil together in a bowl. Set aside.
  2. Sear vegetables separately — In a preheated skillet with oil, fry the carrots until golden brown, then remove and set aside. Repeat with the onion, broccoli, and bell pepper — cooking the veggies separately builds the best flavor.
  3. Combine — Return all vegetables to the skillet. Press the garlic in over the vegetables and toss.
  4. Toss with noodles — Add the cooked lo mein noodles and the sauce. Toss together and cook 3–5 minutes to bring everything together.
  5. Serve — Remove from heat and serve immediately.
