Ingredients
Sauce
- ¼ cup vegetable broth
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
Lo Mein
- 8 oz lo mein noodles, cooked according to package instructions
- 1 large carrot, julienned
- 1 cup broccoli, chopped
- 1 large red bell pepper, sliced
- 1 medium onion, sliced
- 4 garlic cloves
- 1 tablespoon oil for frying
Instructions
- Make the sauce — Whisk vegetable broth, soy sauce, brown sugar, and sesame oil together in a bowl. Set aside.
- Sear vegetables separately — In a preheated skillet with oil, fry the carrots until golden brown, then remove and set aside. Repeat with the onion, broccoli, and bell pepper — cooking the veggies separately builds the best flavor.
- Combine — Return all vegetables to the skillet. Press the garlic in over the vegetables and toss.
- Toss with noodles — Add the cooked lo mein noodles and the sauce. Toss together and cook 3–5 minutes to bring everything together.
- Serve — Remove from heat and serve immediately.
